Jasmine rice, also known as Thai Hom Mali. A variety of long-grain rice cultivated in Thailand. It is very fragrant and when cooked it is slightly sticky (because of amylopectin (a soluble polysaccharide and greatly divided polymer of glucose found in plants. It is one of the two components of starch, the other being amylose)), but flavorful. It is often used for traditional Southeast Asian dishes and is also known as Thai fragrant rice, a name that applies to the jasmine fragrance provided when the rice cooks. It is available in both white and brown varieties. Although fragrant and delicious, the white variety does not compete with the other ingredients in a dish. The brown variety contains the bran, which provides more nutrition and fiber, but requires additional cooking time.

The pleasing fragrance of star jasmine (not a true jasmine at all, but very reminiscent of jasmine) dominated the atmosphere of her immaculate garden. The jasmine hedge was in full flower and the smell gorgeous.
You know, I was thinking… If I ever have another daughter, I will call her Jasmine.
